Chief Operating Officer
A graduate of New York University's School of Business and Public Administration, Eric Lilavois began his post collegiate career working for legendary film producers, Don Simpson and Jerry Bruckheimer. Script development taught him to balance creativity with business but ultimately, he decided the film industry was not his calling.
Following an intense period of travel, Eric settled in Crested Butte, Colorado where he aimed to ski for a season. He took his first restaurant job and was instantly inspired by the camaraderie of the staff and the passion they shared for food, wine and service. Soon after, he decided to pursue the restaurant industry as his profession.
Eric returned to New York, his native city, and worked for Steve Hanson (BR Guest) as Beverage Manager of Blue Water Grill. A stint with Larry Forgione and Jonathan Waxman as Corporate Beverage Director led him to City Hall Restaurant in TriBeCa where he worked as General Manager.
In 2004, Eric joined Thomas Keller as Director of Operations for Per Se and Bouchon Bakery. In 2006 he was promoted to Chief Operating Officer for the Thomas Keller Restaurant Group.
