Director of Operations
As Director of Operations for all of Thomas Keller's casual restaurants in Yountville, Las Vegas and Beverly Hills, Brian Cochran is responsible for ensuring continuous improvement in quality of service, operational and financial effectiveness, as well as employee retention.
Brian was first hired as General Manager of Bouchon Las Vegas, where he supervised all aspects of the restaurant's day-to-day service and staffing needs. Due to the exemplary leadership skills he has exhibited since he first joined the restaurant, he was the natural choice to lead and oversee the growing needs of the Bouchon, Bouchon Bakery and Ad Hoc establishments on the West Coast.
Brian began his management career in Las Vegas more than twenty years ago where he worked at local properties, such as Caesars Palace Hotel and Casino and Brinker International. He worked for eleven years with Chef Mark Miller as Managing Partner of Coyote Cafe in the MGM Grand until its closure. He went on to become the Director of Venue Operations for The House of Blues at Mandalay Bay, overseeing its restaurant and concert business.
A Long Beach, California native, Brian enjoys golfing and traveling with his family: his wife Dena, and their two sons, Jordan and Hayden.
